Heather honey is one of the rarest and most unique honeys of Greece. Collected late in autumn from the purple flowers of heather (Erica) in the low mountains of Laconia. Its unique property is its thixotropic texture - jelly-like when at rest, but liquid when stirred. Rich in proteins with proven healing properties.

Heather honey is perhaps our most unpredictable harvest. Heather flowering depends on October rains, and some years production is minimal. But when conditions favor, the result is a honey that rewards patience. Its thixotropic texture surprises anyone tasting it for the first time.
